Having these parameters ensure the best attributes for taste, as green coffee remains unadulterated. Hotter temperatures dry out the raw beans as heat contributes in the loss of moisture, while humidity may decrease or increase the moisture in each bean.
The air also needs to be purified for any contaminants that may pollute the aroma of the raw beans.

The Empire, as it is fondly called, is the first Third Wave café to open along the stretch of West Avenue in Quezon City, offering a mix of as much as 20 varieties of coffee beans. These are all roasted to perfection and brewed in all methods possible, and paired with food prepared in a contemporary style that merges a varied selection of cuisines.
The love and passion for coffee also dictated the birth of the so-called Third Wave Coffee shop.
The desire to serve a perfect cup of coffee prepared in different methodologies and presented in a well-articulated manner paved the way for the development of this concept, which is very far and different from the Second Wave concept.

The Third Wave Methodologies of Preparing Coffee
We don't use only espresso machines, percolators, and even siphon brewers, but also almost every equipment out there for making coffee. We're proud to say we've mastered the preparation for each!
We make sure to use the right temperature of the water used for brewing and extraction of espresso, the right amount and grind size of ground coffee beans, and the correct brewing time or extraction time for our coffee preparation.
We study the intricacies of the different coffee filters, from metal to cloth and paper filters, and their effects on coffee.

The coffee bar lets our customers enjoy the craftsmanship of our baristas as they make coffee with the sights and sounds of the Synesso espresso machine.
They can also see how their steaming cup is topped with beautiful latte art, or learn about different brewing methods for single-origin coffees of the world. The spacious dining area ensures a comfortable dining experience, a good view of the coffee bean roasting area, and our temperature-controlled facility room called The Green Room, where we store our beans to keep them fresh and of top quality.
